It's about a recipe a little more complex than what you could follow in order to create the "solos" profiteroles, but that with a bit of commitment will allow you to taste (and make you taste!) one cake really original, in which in addition to delicious cream puffs you will find layers of leaf paste and custard. In short, a fantastic dessert, with which you can enrich the end of your meal together with your loved ones.
But how to prepare it?
Ingredients for making the profiteroles cake
Let's assume we want to make a good profiteroles cake for about ten portions. To do this, get:
- 1 roll of rectangular puff pastry for cakes, which you can easily buy at the supermarket;
- 15 puffs to fill, and which will form the heart of our profiteroles cake;
- 50 grams of white chocolate;
- 100 grams of dark chocolate;
- chopped hazelnuts.

Prepare the profiteroles cake
Let's start from the base… in the true sense of the word. It therefore begins by obtaining 2 layers of pastry of about 15 × 25 centimeters from a rectangular pastry roll. Prick the sheets with the edges of a fork and then place in the oven at 200 degrees for about 10 minutes. Meanwhile, prepare the custard and let it all cool.
After the puff pastry, prepare the stuffed puffs (profitterol)
Having overcome this first obstacle, let's deal with the cream puffs. Obviously, you can make the cream puffs yourself, starting from the basic raw materials that will allow you to create them in a more rudimentary way, from scratch, or you can buy them directly at the supermarket. It is clear that the first solution would be preferred, but if you are not familiar enough, you can still fall back for the ready-made version.
Remove the layers of puff pastry that you should have left in the oven and place them on a baking rack to let the pasta cool completely. Take the puffs and stuff them with the custard, and then cover them with the dark chocolate glaze. Using a pastry bag, cut to about 2-3 cm, cover the first layer of pastry with the custard in tufts.
If you do not want to use the pastry bag, the result can still be identical by spreading a layer of custard under the profiteroles: this is a less elegant mode than the first, but you could use it to run for cover if you lack the above. Profiteroles cake with chocolate
Once this is done, at this point all you have to do is decorate the surface of your profiteroles cake with more white chocolate, helping you again with the pastry bag with an even narrower cut, so that the chocolate thread that will come out is even more subtle. Sprinkle the surface with chopped hazelnuts to complete the whole.
As is evident from the lines we wanted to share, many steps of our recipe can be "skipped" by buying some ready-made components at the supermarket. However, if you have the right knowledge to be able to intervene in first person with the creation from "scratch" of all ingredients, it is certainly preferable to do it yourself (think of cream puffs, or puff pastry: you can buy them ready-made or make them at home).
