- 130 grams of rice flour
- 20 gr rice starch
- 1 tablespoon of cream of tartar
- 1/2 teaspoon of baking soda
- 5 gr of salt
- 20 ml of extra virgin olive oil
- 110 grams of warm water
- a small potato
- coarse salt
- half a red onion
- a little bit of oil
Combine all the solid ingredients and mix them carefully. Add the liquid ingredients (water and oil) to obtain a mixturesticky,very different from the classic mash we are used to.
Arrange the mixture in a round oven pan with a diameter of about 22 cm. Once you have compacted it well, with a fork, make very superficial holes.
Peel the potato and cut it very finely. Place the potato slices on theflat breadstill raw, add pitted olives, coarse salt, a few slices of onion and a drizzle of oil.
Bake in the oven at 180 ° C for 30 minutes.
