Below we will look at several cereal salad recipes. There are ready-to-use cereal mixes on the market, to be cooked and seasoned with the ingredients you like best. Using these prepackaged blends you will get a mixed cereal salad. Alternatively, you can prepare a salad of a single grain, just like you would do with rice. In my opinion, to cook cereal mixes it would be more appropriate to prepare soups or use them to accompany vegetable soups. Salads are already packed with ingredients, and mixing more grains might be inconvenient.

Spelled salad, recipe

The ingredients for 2 people

  • 100 g of einkorn spelled
  • 20 g of parmesan
  • 3 eggs
  • 5 courgettes
  • a bunch of borage
  • half a white onion
  • 1/2 lemon
  • 5 sage leaves
  • 1 teaspoon of anchovy paste
  • extra virgin olive oil
  • salt

In addition you can also season with soy sauce and apple cider vinegar.

How to prepare the spelled salad?

  1. Boil the spelled grains in boiling salted water. Cooking should take approximately 20 - 30 minutes, read the required times on the purchase package.
  2. Wash the borage, remove the stems and cut it into strips. Sauté the borage in a pan with boiling oil.
  3. Blend the borage with the eggs, stir in the sliced ​​spring onion, sage and cheese. Prepare an omelette which, due to the presence of the vegetables, must turn green. Then cook in a non-stick pan.
  4. Slice the courgettes, cut them into strips and let them just burn on a non-stick pan on which you have added salt.
  5. Mix all the ingredients and season with anchovy paste, oil, salt and diced omelette.

Ineinkorn spelledit is a very ancient but also not very common variety. It is not easy to find in supermarkets but often on Amazon there are excellent proposals inserted by food shops or by the producers themselves (for all the info I refer you to the search page: einkorn spelled on Amazon). If you have pearl spelled at home, you can prepare acereal saladusing these ingredients, always dosed for 2 people:

  • 100 g of pearl spelled
  • 1 rabbit leg cooked in broth with celery, carrot and 700 ml of water, half a glass of wine.
  • 1 bunch of parsley
  • 1 handful of Gaeta olives
  • White wine vinegar
  • extra virgin olive oil
  • salt and pepper

The pearl spelled salad can be dressed with white and tender meat such as rabbit or chicken.

Red rice salad, recipe

Rice is a very common cereal, to make the rice salad recipe more enjoyable, we will not only offer it based on fish but above all we will advise you to use red rice. Here are the ingredients for two people:

  • 100 g of red rice
  • 50 gr of mixed salad
  • 8 shrimp tails
  • half a carrot
  • tender peas
  • a few leaves of rocket
  • extra virgin olive oil
  • salt and pepper

Here's how to make red rice salad with prawns.

  1. In a large non-stick pan, heat a drizzle of oil and toast the rice. Add double its volume to the water. Add the salt, and cook for 30 minutes until absorbed (add water if necessary).
  2. While waiting, steam the shrimp tails for 4 - 5 minutes. Shell them and let them cool. Cut 2 shrimp tails into small pieces and leave six intact.
  3. Just cook the peas.
  4. Chop the rocket leaves and julienne the carrot.
  5. Let the rice cool.
  6. Mix the rice with the shrimp tails cut into small pieces and with the other vegetables. Season with oil, salt and pepper.
  7. Stir again and garnish with the shrimp tails.
